Description:      These are a quintessential Argentine treat, consisting of two shortbread-like cookies sandwiching a filling of dulce de leche, jam, or mousse.

My Notes:         These are really easy to make and very tasty.

I couldn’t get Dulce de Leche and making it was too difficult, so instead I made a salted caramel filling. The saltiness went very well with the flavour of the cookies.

Remember to keep refrigerated or the filling will soften.

I sprinkled icing sugar on mine. My result came out dark because I tried jaggery instead of date sugar.
