Dish:                       Bolo de Ginguba

Description:      Bolo de ginguba is a delicious peanut sponge cake from Angola. Simple to make, this is a basic sponge cake recipe flavoured with peanut butter, then ‘iced’ with caramel then completely covered with chopped peanuts.

My Notes:            I made this cake with half the ingredients as it didn’t look so appealing. You will find the batter is quite runny but that’s okay. It baked up well at 180 degrees for 40 minutes.                             I reduced the topping by half again because I didn’t want it too sweet.                             The end product was a surprisingly very tasty cake.
