Description:      Brac de Gitano is a thin cake filled with apricot cream, rolled and then sliced. Andorrans enjoy this rich dessert with tea or coffee.

My Notes:            Make sure you use the right size pan or, if smaller, make less cake mixture. The baked sponge needs to be thin enough to roll up. I used marmalade instead of jam to reduce the sweetness.

                             This has a lovely almond flavour in the cake. Store in the fridge to keep the filling firm.
